Grain-Free Banana Bread

This banana bread is not only gluten-free, but it’s grain-free! Made with coconut flour and honey as a sweetener, this is without a doubt a ‘real food’ version of this favorite baked good. It is surprisingly moist and doesn’t carry a heavy coconut flavor.



Ingredients:

dry ingredients
-1/2 cup coconut flour
- 1 tsp baking soda
- 1 tsp cinnamon
- a dash or two of sea salt

wet ingredients
- 4 pastured eggs
- 1/3 cup coconut oil (I use this brand)
- 1 tsp vanilla extract (I love this one)
- 4 medium bananas (ripe)
- 1/4 cup raw honey

Directions:


1. Preheat the oven to 350F.
2. Whisk together dry ingredients in a medium size bowl and set aside.
3. Mash the bananas in a small bowl (I use a potato masher like this one).
4. Melt the coconut oil on the stove top (and the honey if it is in a solid state).
5. Mix ALL ingredients together including the ones that you have not yet touched and the ones that you have set aside.
6. Mix well and pour into a greased loaf pan (I use butter to grease the pan).
7. Bake for 1 hour and enjoy.
